One of my favorite lunches is a Strawberry Chicken Salad. It has baby sweet lettuce (no spinach or arugula), cubed grilled chicken, strawberries, grapes, blueberries and shredded carrots. Sometimes I add in pumpkin or sunflower seeds. I vary the dressing. Often for the chicken I will buy a rotisserie chicken and use it in the salad instead of grilled chicken. It is such an healthy, tasty and easy grab and go lunch.
